If you wish to quickly create such then do the following

  1. Copy whatever text you wish to save to the clipboard
  2. Open your file browser (demonstrated on Solid Explorer)
  3. Click "create new"
  4. Type the name of the file you wish to create and end it with ".txt" or ".doc" and click OK
  5. Open the file you have just created as a 'text' file and paste what you have previously copied

Its as easy as that.
